the owner or agent of the listed property can enter the sale on Zillow manually if you are in need of it updating immediately; otherwise the site will get its information from the county assessor or public sites it feed from and that may take a week to a month sometimes depending on circumstances with sale;

Sometimes it takes Zillow a couple months to show the new sales so it should show up soon. Honestly, the lack of one house sale shouldn't have that much of an affect on values for an entire neighborhood anyway.
