You could but would it be worth it. You should consider the overall tenancy (decent tenants, payed the rent, no damages) before expending the effort.

As long as you have a holdover clause written into the orignial lease agreement.  If the tenant remains after the lease agreement has ended, then they are responsible for the rent that would be incurred.  You can withhold this from their deposit.  Just make sure that you give an itemized deposit invoice within your state's required time frame, otherwise you will be liable for up to treble the amount.  Check your particular states laws.
