Is she currently on the mortgage? If so she can if she qualifies for the new loan on her own.

If she was on the original Note, Mortgage, Deed and qualifies on her own, there should not be an issue.  You would sign the new mortgage, (acknowedgment of debt), but not the Note (responsibility for debt). That way, should you part ways, sign over the house, you have no debt responsibility and no further ties.  Good luck to you.
