I accidentally hit enter too soon, sorry, yes there are people who don't have their homes history etc on Zillow. As previously said, it comes from a data provider etc.
What you can do is go to Union County and ask whether your information be NOT made available for the public....some places do that. However home sales are rarely exempt because they help with appraisal data etc.Have you considered at least going in to MY ZILLOW, top right, claiming your property and changing it or updating the information?

Many of the listed homes that don't show the price history have duplicate home details pages; one that came from the county records, and one that the machine didn't properly reconcile the address when reading an autofeed from another website.
Those interested in the information will be looking for the other home details pages for the same lot.
And Zillow only pays the data provider companies for ownership housing unit data, thus if it is a rental apartment complex, Zillow doesn't have the public records. Similarly for empty lots, or for commercial buildings.
And due to storage methods and conversion process, most data provider companies are only paid to go back so far in the records. In this area, it is about 40 years, thus transactions prior to that don't show up.
Also, close family transfers and inheritance transfers don't seem to show up, unless the data provider company copies the records wrong.

In most states your sales price is public information, however some times sales get "missed" on Zillow and in the automated public record for transfers or sales that are recorded out of state, are part of an estate or for other reasons.
On Zillow, they have not been removed, they were just never picked up by the data provider. If you want to keep your sales price private, I would call your local assessor or recorder's office and ask if they have a system to do that. Some recorders can restrict information to be a request only where the information is available, but the person wanting it has to fill out a form or come into the office for the information.

ZIllow only takes their info from PUBLIC RECORDS and MLS listing/sales history. If ZIllow has it, MLS has it also, as well as Trulia, and other real estate sites like Zillow.
What your home last sold for has no influence on your current value so I would not worry about it.

There are tons of ppl that don't have a public sale record on zillow but can be found on public record.
