There are several types of E-mails that Zillow sends out, so there are several possibilities for unsubscribing.
Saved searches: Go to "my Zillow" (in upper right) then click on the words "saved searches". Once that screen is open, you can see the option to delete all of them.
Favorite homes: Go to "My Zillow", click on the words "Favorite homes" and then you'll see a list. You can remove favorites or uncheck both boxes related to E-mails for each favorite.
General Emails: When you have your profile open, on the left you'll see the words "subscriptions". Uncheck all E-mail preference boxes.
