Go to your profile. Click listings to the left. Under actions click Edit Listing. You will see "open house dates" Put the date and time of the open house and then save by clicking on continue.

On Trulia you can directly add open house schedule to the site. I was wondering if you can do that on Zillow as well.

I personally add an open house on my MLS service and it sends it out to websites like Zillow, Trulia, Redfin, etc..
