How do you update a listing, when house has been gutted and redone with all upgrades?

On Zillow, the best way to do that is with the owner's estimate. That feature is offline right now and I read that it would not be back until March. For now, your best option may be to update your home facts and then make a not of your remodeling in either the home description area or the Zestimate comment area.

When permits are taken for sustantial upgrades or change of footprint for additions etc., this usually triggers a reassessment in value from your county assessors office.  Along with claiming the home on Zillow - this should up your zestimate.
As far as listing the home, the marketing remarks should address the changes and improvements made, focusing on increased value - which will then refresh on websites like Zillow and so forth.

Home owner can Claim the home and note upgrades and costs.  Your own estimate based on the upgrades will be noted below the zestimate as 'Home Owners Estimate'.  Also the town assessment increase will increase the zestimate.

It may simply be a matter of staging the house for buyers, not remodeling it again. Ask an unbiased professional to come and give some pointers about what buyers will like and dislike. When we live in houses, we don't see what other people see when they look at our homes. A professional knows what little changes could make a big difference.
