Google uses their own satellite images. Zillow does reference Google's drive-by street views, but not the satellite images.
The satellite images shown are mostly by Pictometry International Corp and are being referenced through Microsoft Bing's website.
Though the commercial satellites pass over the same spot on earth about once every 2 years, if there was cloud cover, those photos have to be thrown out, thus the additional time.
Some commercial satellites can cover the entire earth with photos in 6 months; but then you are paying more for the satellite images instead of accessing the ones they offer for "free".
Just remember, 11 years ago, if you wanted the satellite images, you paid $10 for each from a Russian Satellite, the pixel size was almost 3 ft across, and the images were monochrome. "Free" satellite pictures have become much more readily accessible and higher quality, but it is unlikely one will ever get anywhere close to "real time" images.

Aerial photos and satellite photos come from third party providers, so at best it would be every two years and it could be six years or longer.
