I am a willing buyer and have a willing seller.... we are just clueless on paperwork.

Can we hire someone just to do the paperwork?

The best idea at the stage you presented would be to contact a local real estate attorney.  I would urge you to have the terms and conditions mapped out and agreed between the buyer and seller prior to going to the attorney to keep fees to a minium.  Good luck.

From the Dept of Justice Web Site

Colorado:
1. Allows choice of brokerage services
2. Allows brokers to offer rebates to consumers
What are the laws in your state?

"Fee-for-Service Arrangements"

"Brokers willing to sell a subset of real estate brokerage services, often called fee-for-service brokers, have emerged throughout the country. Fee-for-service brokers "unbundle" the package of real estate services typically offered by traditional full-service real estate brokers and charge a set or hourly fee for specific services, such as listing the house in the MLS, negotiating or closing contracts, and pricing the home. These brokerage models typically enable consumers to save thousands of dollars by allowing them to purchase only those services they want.

Rebates and Inducements

Some real estate brokers have increasingly begun to compete for customers by offering cash rebates or other inducements to home buyers and sellers. Rebates that go directly to buyers or sellers lower costs on both sides of the transaction. Cash rebates are usually calculated as some fraction of the broker's commission and can result in thousands of dollars being returned to the consumer."

You should contact an agent in your area. They will charge a fee, but will take care of all the contracts and required disclosures for the transaction. The fee should be considerably less than the commission normally charged since marketing the property won't be involved.

If neither of you is working with a real estate broker on this transaction, your next best option would be to seek the assistance of a skilled real estate attorney.  They can facilitate all the necessary paperwork and advise you on matter to mitigate and risks you need to be thinking about from a legal perspective.  Good luck with your transaction!

An attorney who handles real estate transactions should be able to help you with completing the sale.
