They won't remove a zestimate. What you can do to combat that is do your modified zestimate as a real estate agent. If you don't want to do those things, then pull the listing off Zillow.
Our MLS has a checkbox for having the address on public sites. Did you see if you are accidentally feeding the address into Zillow?

Part of your job as an agent is to understand the various sites and educate your clients. The taxes happen to be a matter of public record, and Zillow doesn't remove data from public records. The Zestimate is calculated from public records, so it is Zillow's policy to not remove it.

You can flag the taxes if they are incorrect. Douglas County has all tax information online so it should be easy for them to check accuracy of the information here.
As far as I know, Zillow will not remove the Zestimate by request or the taxes by requests since both are based on public records information. If your seller does not want them, then you can consider taking the for sale listing off Zillow.
I would direct your seller to Douglas County's website that shows their total real market value to be 102,147. That low value is sure to be affecting the 312K Zestimate. As agent you are not able to control Zillow's valuation. I am sure your client will understand that.
