It does seem to take time for Zillow to pick up the new/corrected information from the assessor's office, but they will do it. It can take a few weeks for the home facts you updated to have an effect on the Zestimate, but the addition of the bedroom should make it more accurate.
From what I have seen, Zillow will use the combined home facts for the Zestimate and not the public facts so taking the time to update those is definitely worth it.

Our realtor has updated our Combined Home Facts and has attempted to speak with Zillow directly about our Public Facts issue (2 bedroom instead of 3 bedroom).
I corrected the issue with the County Assessor's office 2 months ago and Zillow has not adjusted their information in respect to that.
With similar houses in the area (some 9% less SF than us), the ones with 3 bedrooms have a 7% higher value than us.
I can't help to think that this statistic problem is hurting our value.

You can claim your house and edit the home facts on your home page. Claim the house with the yellow edit pencil first, then you can "update home facts". The information you submit is what Zillow will use to put into the Zestimate and not the outdated public facts.
Your public facts usually come to Zillow form a data provider that gets them form your assessor's office. If your public facts are wrong, you can update them at that level and then Zillow will pick up the new information when it gets new data. You do not have to do that to get them included in your Zestimate though. Zillow will use your updated "combined home facts" for that.

There is a little, nearly transparent, flag, to the right of your public info. Click it, write the problem in the pop up box. Hit submit.
