Our street photo was dated and the worst part was that the house was ugly before paint/landscaping. I was anxious for the "new" house to go online, but took Google about 2 years to add the new street shot.
In the meantime, I just uploaded my own from photo to replace the standard street shot. The links that Cindy posted will help you claim and add them if you want to try that approach.

Also note that Zillow doesn't take photos of houses. They're pulled from other sources like tax records and previous sale listings as well as aerial shots through services like Bing Maps.
As Cindy mentioned, claiming your home is a good idea to make the edits yourself.
