Check with your local town/city before you start doing anything to be on the safe side, to have to get a permit afterwards is a 'pain' and also can be costly. They can ask you to tear it out or down....

You can remodel without a permit in most states as long as the changes are not to major systems (additional electrical, plumbing beyond the wall, new heat source) or structural (adding square footage, removing bearing walls, adding a room in the attic/basement).
Cosmetic changes like replacing interior doors, replacing countertops/floors, replacing existing light fixtures, replacing plumbing fixtures like sinks/toilets/faucets often do not require permit, but check with your local building department to be sure.
