No, if the dates are correct, no one can change the dates. If the dates are incorrect a document can be re-recorded with the purpose stating as to why. But why would you want to do that and does it really make a difference?

I don't know. You sign the papers to close a house and then it has to be recorded so often those two things fall on two different dates.
