There are homes all over NC with over 1 acre, you just need to narrow down your search.  Of course areas that are more populated will not have as large of lots usually however the more rural you go the larger the lots tend to be.  Contact a local agent in the area of NC that you wish to find more information and they can send you a search of homes that meet your criteria.  This way you can see what is available to you.  Also, when searching including .75 acre and up, you can't tell the difference and sometimes a home with .80 acres gets lost in the search for 1 acre specific and more, I find that we find some of our best options when we go the slightest bit under the acre and up.

Where in NC?  In western NC, we have a great number of homes with 1 acres or more, about half not in subdivisions.  And we have mountains

If you are looking at 1 acre you can find plenty of properties.  However I assume you are looking for 1 acre that is less money.  For south charlotte those lots may go around $100 - $200k, for north charlotte you can find them cheaper.  There are plenty of "larger" lots but you just have to find what price point you want to be in.  The cheapest will be on west and the east sides of Charlotte.  If you clarify the price point I would be more than happy to assist.

Also, land financing is much harder to come by so you need to be prepared to bring 50% downpayment.  There are other higher loan-to-value lenders but you will also need a higher credit score.
