It takes several weeks to several months for the Zestimate to change in response to changing ones facts such as the extra half bath. The last one I monitored carefully was 8 weeks. Your edits were on April 7, which was slightly more than 4 weeks ago, therefore, be patient.

Zestimates do not take in to consideration things such as condition of the house. If you are looking for the market value I recommend that contact a real estate agent in your area.

There is no substitute for a certified appraisal or for a Realtor that is
experienced in your area doing a CMA.( evaluation ).
Although you should
update the info on your description for Zillow,it may not change the value that much as it is the
other sales and info that is making the number change so drastically. One 1/2
bath for most homes under 300,000 to 500,000 would only add 3,000-4,000 for the
1/2 bathroom and it had to be all new.If it was not updated,it would be less.The differences of 15-35,000 would not be the
difference of a bathroom,as much as it would be other sales with different land vaues,site value,upgrades,sq footage...etc..
on each that would be inferior to yours to raise your value.
You mentioned based on the time of the year,which leads me to think you might check every 3 months ( seasonal) which in today's changing market one WEEK can change the values.Mostly the new sales and information is what changed the value,which is why an appraiser adjustment of 3,000-5,000 will not change the value that much.
YOu should have a Realtor come out and give you a value on your home,and know that even THAT value can change weekly if a brand new appraisal is done.
