It can take a couple of weeks to several months on Zillow to reflect change of owner, but if you know the previous owner's name you can claim the home now.

I am the new owner. I purchased the lot yesterday. It will take three or four days to reflect change of owner.

Zillow assumes standard condition, and unfortunately things such as fire/wind/earthquake damage aren't reflected and can't be edited by user.

No, you cant, and there would be no purpose in it, as its assumed any damage would be eventually cured by either you or a future owner.
You could CLAIM the home then change description to note present condition.
