You don't need to be listed on any MLS to post your listing on Zillow. You can post an ad yourself for free.
You'll want to find your state contracts - most likely online - you might have to pay a fee for them if they're not available. I don't believe a title company won't pass along copies of the contracts. I'd highly recommend hiring an aattorney to review docs prior to closing.

Zillow is a site where you can advertise, but it is not a real estate company. Therefore, they do not provide contracts etc. If doing a FSBO, having a real estate lawyer is a good idea.

You do not need to be on MLS to post on Zillow. You can post an ad yourself for free using Postlets or pay for a featured ad to come up higher in the searches. The information on posting FSBO is here.
If you are selling FSBO and want to be listed on the local MLS, your best bet is either negotiating a flat fee listing with a paid contract service through a real estate office or going with a flat fee MLS only and getting forms for your state from an online source thaty ou can have an attorney look over for a flat fee if you want.
