I have a home in sandy, ut and zillow lists an incorrect square footage amount, by over 3,000 sq ft. How do I get this changed?

Most of the info on Zillow is procured from public records.  Not sure how it works in Utah, though.

You can make manual changes by claiming your home.  I'm sure wetdawgs will be along shortly to give you detailed, step-by-step directions far better than I could.

Open your home detail page, hover the cursor on the pencil edit menu, click on the Claim your home if you hadn't claim it on Zillow yet, then click Edit home facts, if those menus are unavailable the click on the Report... problem.
