is there a way to change our zestimate on our current home? We've done lots of interior work and hardscape landscaping that the price is not reflecting.

There is a homeowner comment section under the Zestimate where you can list your improvements.   I would not worry about the Zestimate being low, they are rarely correct, quite like the tax assessment.   Most real home buyers have clued into this and if they have an agent working for them, the agents will help them determine true market value.
