If you really wanted to, you could use a Google Advanced search limiting the search domain to
http://www.zillow.com/homedetails/
As that would allow you to use Boolean logic. But then you don't get the map. You would need to limit the range of search by including a city and state name, or by including a zip-code.

My best advice is to find a qualified agent on Zillow (reviews are available) and ask that agent to sign you up for a search directly in their MLS (Multiple Listing Service). Within the MLS, the agent can customize things like number of living levels, or a style of home (such as a ranch).
If you are concerned about paying a buyer's agent, it's important to note that most buyer's agents are paid out of the commission split offered by the seller's agent in MLS, so the money usually does not come out of your pocket and you still have a professional to negotiate on your behalf.
