I agree with Gordon, while I hope you can pull the panels down easily and only do some touch up to the walls, I find this unlikely. Not sure what look you are going for, but painting it is an option if the demolition is too much for you.

Chances are the paneling was installed with some type of construction adhesive like liquid nails. If this is the case the entile wall must be taken down there is no saving the drywall. If liquid nails was not used, you can take the panelling down carefully preserving the drywall behind it savings you a lot of money. In that case you would only need to fill nail holes, possibly skim and paint.
Without seeing the job it is tough to give you an estimate. Calculate your material costs and triple it would be a good gauge if your are going top hire someone.

I would suggest painting it. That is what most people do when they buy these old homes. If you don't like it after it is painted, rip it out. Paint the ceiling white and the walls a nice cream color and the wood feel is gone.

A sheet of drywall is 4*8 foot.  You're looking at about $5 a sheet, plus mud and then paint.  Good Luck

I would recommend calling a contractor (try AngiesList) there could be many variables behind this that someone could only tell if they were in person. Someone should come out and give you a free estimate. See how much of a break a contractor will give you if you remove the paneling yourself (if you feel comfortable).
