Valuations are usually incorrect on zillow in Utah. Utah is a non-disclosure state so this information is not available to zillow anyway. Zillow gets their information from public records in other states for their zestimates etc but they do not have access to this information in Utah.
So, it doesn't matter if zillow has the value wrong or not because most properties in Utah have incorrect values.

You can use the small white flag next to the transaction to alert Zillow of the difference in the recorded purchase price. If your local assessor or recorder's office has the information available, Zillow can verify it and make the correction.
Also, if you have a link to send in the flag to to your local assessor/recorders office, send that in the trouble report too to help minimize the time it takes Zillow to verify and make the correction.
